February 9, 2012 Thursday

Well it's been a while since I posted, and I'm so sorry! I have been struggling with lots of emotions this week. Not to mention trying to decide if low carb is still the way to go for me. After joining Myfittnesspal.com I really saw the fat and calories i was in taking. It kinda scared me! So I tried adding more carbs and lowering my fat and calories and I did have a slight loss in the first few days, but then started gaining again :( I was also so tired and hungry all the time! So I started a strict 40 or under low carb plan on Monday and I have lost 4lbs already this week!!! This is What I've been eating...

Breakfast everyday has been
2 oz cream cheese melted in the microwave
2 eggs beat into the cream cheese
1 tsp Brown Sugar Splenda (Yes! They have it at Walmart)
1 tsp vanilla
1 oz slivered almonds
1/4 cup almond flour

Mix all together and I've been bringing this to work uncooked and cooking it in the microwave around 8:30am and putting sugar free maple syrup on it!

Monday:
Lunch
Chicken and shredded cheese

Supper
We celebrated my Father in Laws birthday
2 cups of dreamfield pasta
2 cups of homemade canned tomatoes
5 pieces of cracker barrel cheese

Tuesday:
Lunch
Can of chicken
2 tbl helmens mayo
1 avocado
(I shared with my boss this day!)

Supper
spicy chicken tenderloin
asparagus

Wed:
Lunch
3 slices of Turkey
3 slices of pepper jack cheese
8 stalks of asparagus

Supper
at Woody's
cheese burger without the bun
fried onions, peppers, and mushrooms
and a side salad
4 Bacardi and diet

Thurs:
Lunch
3 slices ham
4 slices Swiss cheese

So far this week I have no made the time for Zumba :( and I'm not sure what supper will be tonight! Since I have an amazing husband that cooks!

Tomorrow is weigh in for The Biggest Loser challenge at work! I'm excited!
I'm off to work now! Hopefully I'll be able to update this more often before vacation! Which is 9 days away!
