March 11th Sunday

Hola! It's been another crazy week! I haven't felt the greatest this week. Can't figure out why, but V8 makes me feel better, so I have like 2 a day to keep my head straight! I had blood drawn to check my potassium levels and it came back fine.  I also check my blood sugar and that was fine. I might have one of the docs check my ears this week if this persists. I also was the biggest loser in our Biggest loser group this week! WOOT! I lost 2.8 lbs! The scale read 199.8! Finally under 200lb!!! I've been trying to be good about putting my food in http://www.myfitnesspal.com/ . The weekends are hard, but I'm still trying! I did a little exercise this morning. I started following this...

I finished the 30 sec plank and thought I was going to die! My goal next time is to get through the 45 jumping jacks without peeing myself! That's a chore in itself!

We went to Kobe in Biddeford today for my nephews birthday! It was so yummy! But yes I ate the rice. Yesterday we went to Texas Roadhouse and Yes I had one roll :( So I'm buckling down for this week! I still need to get a few things at Hannaford, but I started my baking already!

Then I made my Almond Muffins but used this recipe...

8oz cream cheese melted in microwave
1/2 cup heavy cream
2 cups almond flour
1/2 cup coconut flour
1/2 cup Splenda
1/4 cup butter
8 eggs
2 tsp cinnamon

Net Carbs: 8

Then I found this one on Pinterest

Almond Flour Banana Bread/Muffins
Net Carbs: 18 per muffin
(that's using my huge muffin pan)
So if you made reg size muffins x 12 they would be 9 carbs per muffin!

I also found a sweet on Pinterest I couldn't wait to try!

Peanut butter whip!

Omg this is so good!!!

Net carbs 6 per 2 tbsp~!
I just mixed the peanut butter in the cool whip container and put it in the freezer!!!
YUM!

Last but not least I got some fresh brussel sprouts this weekend at Sam's Club.
I cut them in 1/2 and put them in the frying pan with some butter, onion, and garlic.
I got two lunches out of it! Then for supper tonight Chase made Steak on the grill and instant mashed potatoes with shell beans and corn. So I made my mashed cauliflower and made extra and added it to my brussel sprouts for lunch!

All in all I think I did pretty good today with prep!

March 4th Sunday

Ok back on track day! I've been searching Pinterest and marking George Stella's New cookbook all morning. I am thinking this week will be meat and cheese for lunch (roll ups) since I need to use up some lunch meat before it goes bad. I have found some cook dessert recipes that I'm going to try today also. My family is also planning on having Shepperd's pie this week so I'm going to whip up some faux mashed potatoes for myself! So here's to a busy day! I'll post each recipe I try!

Wow what a long afternoon! Went shopping at Hannaford, not just for my week but for the family, which took a little time.  Got home and ate a bowl of Fiber One honey clusters with Hood Calorie Count Down skim milk. I thought that was a must before I started to cook.

I started with a recipe from the new George Stella Cookbook.

Pistachio Pound Cake Mini's
I don't have mini loaf pans, so I used the awesome huge muffin pan my mom bought me at Mardens!

3/4 cup butter, softened
6 large eggs, beaten until frothy
6 onces cream cheese, softened
1 1/2 tsp vanilla extract
1 1/2 tsp lemon juice
2 1/2 cups almond flour
1 1/4 cup splenda
2 tsp baking powder
1/2 cup chopped pistachios

Preheat oven 350.  Cook for 35 mins.

I guess I feel bad sharing a recipe that isn't mine to share. So I won't give the directions from the book. If you want to see more great recipes, look up George Stella! He has a great story also!

I decided to try something I saw on Pinterest  this morning. It's on Sara Wilson's Blog



coconut and cheese biscuits

  • ½ cup almond flour or LSA (or other nut flour)
  • 3 eggs
  • ¼ cup butter, melted
  • Salt, a good grind or two
  • 2 cups cheddar cheese, grated
  • a generous shake of chili flakes or paprika
  • 1/2 – 3/4 cup sifted coconut flour
Blend the almond flour, eggs, butter, salt, chili and cheese.
Add the coconut flour and kneed the dough until a moist play dough consistency (1/2 cup of coconut flour might be enough…just see…you don’t want it too dry because it will continue to soak up the eggs…if your dough seems too dry, add another egg or extra butter).
Form dough into balls and put on a tray lined with baking paper. Flatten to either a thin cracker or a thicker (1cm) biscuit.
Bake at 200 C for 15 minutes. I turned them once to get crispy cheese action on both sides.
Makes about 16.

That is her directions, I got 20 instead of 16. and 200 C is about 392 F FYI. I didn't even see that it was Celsius until just this min! DUH! I thought 200 was low LOL I turned mine to 355 F so I could hear the sizzle of the cheese! OMG I feel stupid now!

They are kinda bland, but I think they are something to work with!
Maybe as a pizza crust for instance.

Next on the list was


1 cup creamy or crunchy peanut butter
1 1/3 cups granular Splenda or equivalent liquid Splenda
1 egg
1 teaspoon vanilla
Extra granular Splenda for fork
Line a large baking sheet with parchment paper. Combine all of the ingredients in a small mixing bowl; beat well with a spoon until it becomes a thick dough. Gently roll into 20 balls and place on a baking sheet. Or, use a 2-teaspoon cookie scoop to evenly measure the dough. Dip a fork in granular Splenda and make a criss-cross design by gently pressing into the balls of dough in alternating directions. Be gentle and dip the fork into Splenda frequently because the dough is very sticky. Bake at 350ยบ for 12-15 minutes. Cool before removing from the baking sheet. Store in the freezer and do not thaw before eating.

Makes 20 small cookies
Can be frozen

With granular Splenda:
Per Cookie: 81 Calories; 6g Fat; 3g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs
Per 2 Cookies: 162 Calories; 12g Fat; 7g Protein; 8g Carbohydrate; 1g Dietary Fiber; 7g Net Carbs




These came out really good!


Then I had some left over purple cabbage from last week so I made a stir fry...

1/2 purple cabbage chopped
1 baby bok choy, chopped
4 celery stalks
1 large onion
2 cups frozen broccli

Throw it all in a big fry pan with some oil and any seasoning you like.


I also bought some Quinoa to cook to go with the stir fry~

There that's my prep day in a nutshell! I'm ready for supper now!

March 1st

In like a Lion~!

Well a lot has happened since I was last here. We have been to Mexico and enjoyed an amazing vacation! I also have resigned my position of Changes consultant. Everything happens for a reason! As I sit here enjoying my very rare snow day, I am wanting to just share how happy I am with my life right now!

Everything is falling into place like my dream as a teenage girl. I was however a lot thinner in my dream! But that's ok! I know I can do this, it will take some time, but it will happen! I know that because of all your support! Girls Night Out has been great! Hopefully we can continue to get together weekly to share ideas! I also plan to start my Sunday prep day again. I purchased a new cook book and can't wait to try some new low carb things! I think that is my choice right now, to stay low carb and also try to stay low fat and calorie. Over the weekend I'm going to do some cooking and I will share that on Sunday! If you have any suggestions as to what you would like to see here, please let me know!
