Good morning! 2 days since my last Cigarette!!!
Today is prep day! I'm looking now for things to stay on track for the week!
Called my sister and we took a trip to Trader Joe's in Portland! We got some Almond flour (18lbs) to be exact LOL! Then we headed over to Whole Foods and I finally found some Coconut Flour!
I have to admit that I didn't eat breakfast this morning and only had two cups of coffee... Bad girl I know! I also have to admit that after I dropped my sister off at our meeting point, I wanted a cigarette sooooo bad! I had one in the truck and fought the urge from Hollis to Hannaford in Waterboro and finally gave in :( IT SUCKED! I took three drags and threw it out the window and couldn't get the gum in my mouth fast enough! YUCK!
Got home with all my goodies and started cooking!
While I was waiting for the Moose hamburg (yes I said Moose) and Deer Sausage to thaw I tried something new....
I got this three cheese blend at Whole Foods. Took my mini rubber muffin pan and put a little in each one, sprinkled a little dill weed on top and baked it at 350 until bubbly.
By the time this was in the oven the meat was thawed out.
Stir fry for the week:
Moose Hamburg
Deer Sausage
Edamame (frozen)
fresh brussell sprouts cut in 1/2
fresh snap peas with pods
red onion
green pepper
frozen broccoli
I keep this in a large plastic bowl with a cover in the fridge so I can fill a smaller bowl for work each morning. This also comes in handy if the family is eating something full of carbs like pizza for supper!
I then moved onto the breakfast muffins for the week~!
Breakfast muffins:
Moose Hamburg
Deer Sausage
A few pieces of frozen broccoli
scallions
cheddar cheese
and 2 eggs beaten in each muffin
In between I'm doing dishes! and more dishes! Then it's time for the sweet stuff!
Almond flour muffins:
8oz cream cheese
4 cups almond flour
5 eggs
vanilla
1 cup splenda
Cinnamon
(these came out terrible~!)
They stuck to the pan and now I just have lots of pieces of muffin.
I will still eat them but just take this as a base and add to it.
Cookie time
Almond Flour Cookies
1 stick of butter soft
4 cups almond flour
1/2 cup honey
2 eggs
1 tsp baking soda
salt
1/2 cup unsweetened coconut
Chocolate chip cookies
makes 2 dozen cookies
Ingredients:
1/2 cup unsalted butter, room temp
3/4 cup granulated splenda
4 large eggs
1 1/2 teaspoon vanilla extract
1/4 cup + 2 Tablespoons coconut flour, sifted
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/3 cup(33g) pecans or walnuts, chopped
1 recipe of Chocolate chunks
Instructions:
In small bowl add coconut flour, baking soda and salt. Set aside.
Cream butter & splenda until light and fluffy in mixer with paddle attachment.
Add 2 eggs while mixer is running. Add Vanilla.
Then add your coconut flour mixture.
And then your last two eggs. Mix till just combined on low, then turn mixer on MED/HIGH and beat till mixture is completely smooth.
By hand fold in chocolate chunks and nuts.
Refrigerate dough for at least an hour before using in an airtight container. This will make it easier to scoop and work with.
Preheat oven to 350F
Line cookie sheet with parchment paper, or nonstick baking liner.
Scoop with a 1 Tablespoon cookie scoop(#60), if you don’t have one, scoop 1 Tablespoon then roll in your hand to make ball.
Press down cookie with palm of your hand, just enough to flatten slightly.
Bake @ 350F for 12-15 minutes
They're ok, not great.

I washed out Donny's (the fish) bowl, visited with my Mother in Law and Kay for a few minutes and finally get to sit! So now that everything is done and put away I'm going to work on knitting a sock for my bosses cast and then crochet a little. One of my favorite shows comes back tonight! Undercover Boss!!! I cry every time! Boys are at a sleepover so it's just me and my love tonight! Back to work tomorrow!
